FOOD & DRINK

Only a short road trip from Madrid the Province of Guadalajara is in the northeast of the Autonomous Regional Community of Castille-la-Mancha famous for its wonderful roasts, especially lamb. It borders, amongst others, Segovia, renowned for its suckling pig.

The cuisine in general is based on seasonal produce and may differ depending on the district you are in. Migas (slowly-fried breadcrumbs) served with tiny pieces of pork fat and fried quail eggs make for the perfect breakfast before setting out on a fresh morning for a day's shooting. Garlic soup, Morteruelo (game pâté), white kidney beans, snails, mushrooms of many varieties, truffles and trout are just a few of the dishes to be tried in the area. Fried kid is a speciality and pork and game dishes are marinated in different ways producing wonderful flavours.

The outstanding, world famous honey of La Alcarria is used in many recipes.

When in season the asparagus of La Campiña is unique to Spain.

Guadalajara produces extremely decent wines, with Cencibel and Cabernet Sauvignon the predominant grape varieties.
